The traditional cranberry sauce is tart and slightly bitter for some palates. Here is another variation. This recipe adds orange juice and orange rind. The tartness is more balanced and it has a wonderful orange flavor along with the cranberry taste.
1 package fresh or frozen cranberries (12 oz.)
1 cup of sugar
1/4 cup orange juice (or more and reduce amount of water)
3/4 cup water
2 teaspoon grated orange rind
Dissolve sugar, orange juice, and water in medium saucepan. Bring to a boil and stir in cranberries. Add orange rind. Turn down heat and simmer until the cranberries are popped. This takes about 10 minutes. Remove from heat and put sauce in a bowl and cover. The sauce thickens as it cools.
