My mother-in-law enjoyed making pies and her pie crust recipe is simple and excellent although unusual. The important tips are to not overwork the pastry and use very cold water. My mother had a totally different technique which I will post later.
2 cups sifted flour
1 teaspoon salt
¼ cup water
2/3 cup Crisco shortening (or use 1/3 cup butter and 1/3 cup shortening and this will still provide a good texture to the crust)
Place the sifted flour and salt into a bowl. Make “paste” with 1/3 cup of the flour/salt mixture and ¼ cup cold water. Cut 2/3 cup shortening into dry flour until the pieces are the size of small peas. Add the “flour paste” to the flour and shortening mixture. Mix thoroughly until the dough comes together. Shape into two discs to roll out for pie.
