Homemade Granola (My Fav)

Sue and Kent’s recipe for granola is my favorite of all of the granola that I have made or tasted. The nuts are chopped finely and this results in a nice consistency. You can eat the granola by itself or sprinkle it over yogurt, oatmeal, or other cereals. This recipe makes a large amount and I recommend making half of the recipe the first time.

1 big box Old Fashioned Oats (~ 40 oz.)
1 cup wheat germ (or sunflower seeds)
1 cup oat bran
3 cup finely chopped almonds
3 cup finely chopped pecans
1 lb. box brown sugar
1 ½ cup vegetable oil (or 1 ½ cup apple sauce)
1 cup water
3 teaspoons (1 Tablespoon) vanilla extract
1 teaspoon cinnamon

Preheat oven to 350 degree Fahrenheit. Grease the bottom of a jelly roll pan. Mix all of the dry ingredients together in a large blow. Sprinkle cinnamon over dry ingredients and mix again.

In another blow, mix remaining ingredients and then slowly pour over the dry ingredients, a small portion at a time. Mix. Spread the mixture on the jelly roll pan to ½ to 1” deep. Bake for 50 minutes, stirring every 10 minutes. You may want to bake the granola longer if you prefer it darker and toastier.

Make ~ 6 quarts. Refrigerate the granola in an air tight container.
