This quartet of spices is commonly used in French cooking. Use the spice mixture for grilling pork, beef, lamb, or poultry. Also use creatively in sauces, soups, or egg dishes.
1/3 cup peppercorns (half white and half black)
4 teaspoons ground ginger
4 teaspoons freshly grated nutmeg
1 teaspoon whole cloves
Put the spices into a blender or electric spice mill and grind them to a fine powder. Pack the mixture into a small jar with tight fitting lid. Store jar in a cool cupboard or pantry away from heat and light.
