Ham Pinwheels

This is an excellent way to use leftover ham. Use packaged puff pastry to make the preparation for this appetizer easy. Other thinly sliced meat can be substituted for the ham.

1 pound package frozen puff pastry
1 1/2 cup freshly grated Parmesan cheese or combination of cheeses
1/2 cup Dijon mustard
~ ¾ – 1 pound thinly sliced ham

Thaw pastry sheet at room temperature for 30 minutes. Preheat oven to 4000 F. Shred the Parmesan cheese.

Unfold pastry on lightly floured surface and brush with half the mustard. Top with half of the cheese and add the ham slices in a single layer. Start at long side and roll up like a jelly roll. Repeat with the other pastry sheet. Cut into 1/2 inch thick slices. Place each piece 2 inches apart on a baking sheet lines with parchment. Sprinkle additional cheese on top if desired.

Bake 10 – 12 minutes or until golden brown.

Makes approximately 60 pinwheels.
