Spaghetti Squash

A friend asked me this week how I prepare spaghetti squash. I use the microwave to do the initial cooking of the spaghetti squash and then finish it with butter in a sauté pan. This is quick and tastes fresh. Of course, you can bake the spaghetti squash in the oven as most recipes suggest.

1 medium spaghetti squash
1 – Tablespoons butter or olive oil (or combination)
Salt and pepper to taste

Wash the spaghetti squash and with a knife pierce the squash deeply in several places. This is important to do because you do not want the spaghetti squash exploding in your oven. Place the spaghetti squash on a plate in the microwave for ~ 5 minutes. Remove the spaghetti squash and cut in half. Microwave another 5 minutes with cut side down until spaghetti squash is almost cooked and tender.

Remove the spaghetti squash from the microwave and let cool until it is easy to handle. With a fork, scape out the strands of spaghetti squash and place in a sauté pan with butter or olive oil. Sauté for 3 – 5 minutes and add salt and pepper to taste.

Serves ~ 4 as side dish
