Braised Cabbage

This preparation makes the cabbage tender and “sweet”. You wouldn’t know that it was cabbage if you closed your eyes and tasted.

1 medium head of cabbage
2-3 Tablespoons butter (or more if needed)
Salt and freshly ground black pepper to taste

Take off the outer cabbage leaves. Cut the cabbage in half and cut both halves into wedges. Melt the butter over medium heat in a large frying/sauté pan. Place the cabbage wedges in the melted butter and “braise” on one side for 2 – 3 minutes. Carefully turn the cabbage wedges over and braise the second side for 2 – 3 minutes. Place the lid on the large frying pan and steam for approximately 15 minutes until the cabbage is tender. Add salt (not needed if you used salted butter) and pepper to taste.
