These are perfect for the holidays. They are “funnel” shaped and resemble the horned-shaped holiday cornucopia. The salami is cut in half and each half is rolled into a funnel or cornucopia shape.
18 slices of Genoa salami (this is the softer salami with a larger diameter)
16 oz. Philly cream cheese, room temperature
1 – 2 Tablespoons parsley, chopped
1 – 2 Tablespoons chives, chopped
1 – 2 Tablespoons dill, chopped
1 pinch of sage
Salt and pepper to taste
2+ Tablespoons of cream
Diced red pepper
Cut the salami pieces in half. Roll each piece around your finger in a “cornucopia” shape. Let these dry for a few minutes in a muffin pan or other container.
Mix the cream cheese and herbs together with an electric beater. Add 2+ Tablespoons of cream to the mixture to achieve for right consistency for piping. Fill a piping bag that has a large tip with the cream cheese mixture. Pipe the cream cheese mixture into the salami cornucopia. Decorate with finely chopped red bell pepper or additional chopped parsley leaf.
You can also pipe this mixture onto a cracker and decorate with minced red bell pepper.
