Potatoes in 15 minutes

These potatoes are a quick side dish. They cook quickly in the microwave. They are “fluffed up” and toppings are added. Potatoes are high in potassium and some of the newer varieties are tasty with just salt and pepper. They can even become a meal by themselves with the addition of sour cream and cheese.

4 unpeeled potatoes, any variety, scrubbed and pierced with fork
2 Tablespoons butter
Salt to taste
Black ground pepper to taste
*Optional: Sour cream, grated cheese, salsa, etc.

Place potatoes on a microwaveable baking pan and pierce each one with a fork. Microwave ~ 4-5 minutes for each potatoes depending on the size of the potato. Take the potatoes out of the microwave and with a paper towel press each potato with your fingers to fluff it up. Slit the potatoes and add butter, salt, pepper etc. to taste. Each person can add their toppings at the table.
