Sweet Potatoes

Sweet potatoes are a healthy alternative to “white” potatoes and have a lower glycemic index than white potatoes.

2 to 4 sweet potatoes (one potato per person)
2 to Tablespoons butter, room temperature, cut into small pieces
2 to 4 Tablespoons sour cream or yogurt
Chopped chives (optional)

Place sweet potatoes on a plate and pierce each one with a fork. Microwave the potatoes for approximately 2-3 minutes per potatoes. [Four potatoes would be ~ 8 – 10 minutes depending on the size of the sweet potatoes].

When potatoes are soft, split each potato lengthwise with a knife. Fluff up the potatoes and add butter and let melt. Place a dollop of sour cream (or yogurt) on each potato and sprinkle with chives.

Serve immediately. Serves ~ 2 – 4
