Chicken Salad

This recipe uses leftover chicken from the rotisserie or BBQ etc. It can be placed on lettuce and served as a salad or used in a sandwich for an easy lunch.

2-3 cups leftover cooked chicken, chopped finely
4 sticks of celery, chopped
¼ – ½ cup of mayonnaise
1 – 2 Tablespoons of toasted pecans
Salt and pepper to taste

Optional: taste the chicken salad first and then add 1 teaspoon of mustard if desired.

Mix all of the above ingredients in a bowl. Add more mayonnaise if needed to moisten the chicken. Be sure to add the congealed gelatin from the leftover chicken if there is any.

Place chicken salad on a bed of lettuce and serve with bread or rolls or use in sandwiches. It can also be served with crackers as an appetizer.

Serves 3 -4
