Coleslaw with a twist

We found a baby head of cabbage at the farmer’s market and decided to make coleslaw.  The addition of apples and nuts make the coleslaw interesting and delicious.

1 head of small cabbage, cored and sliced finely
1 apple cored and sliced finely
4 ribs of celery (inner ribs of celery stock) chopped
1/8 cup of cashews (or pecans or walnuts)
¼ to ½ cup of mayonnaise (depending on your taste)
2 teaspoon Dijon mustard
1 teaspoon Gulden’s spicy mustard
Salt and freshly ground black pepper to taste

Add the sliced coleslaw, apples, nuts, and celery to a bowl.  Mix with the mayonnaise and mustard.  Add very little salt and pepper and taste before adding more.

Serves ~ 4
