We received a bunch of kale free from our local farmer’s market. We developed this recipe which is quite tasty and uses ingredients already in your pantry.
1 bunch of kale, rinsed and sliced thinly (~ ¼ inch slices)
~ 1 Tablespoon olive oil
6 baby leeks, sliced
1 teaspoon balsamic vinegar
Zest from ½ lemon
Salt and pepper to taste
Add the olive oil to a sauté pan and heat on medium. Add kale and sauté and stir until the kale softens, about 5 – 8 minutes. Add sliced baby leeks and sauté a couple of more minutes. Add balsamic vinegar, lemon zest, and salt and pepper to taste. Sauté an additional 1 – 2 minutes.
Serves 4 to 6
