Stuffing (Oven Baked)

Great with poultry (chicken, turkey, hens) or pork. This recipe is from a lodge in Alaska that my husband enjoyed.

½ onion, chopped
3 celery stalks, chopped
4 cups bread cubes
~ ½ – ¾ lb. sausage (sweet Italian or breakfast), casings removed
½ cup chopped pecans
½ cup Craisins (dried cranberries) or raisins
2 cups chicken stock
Fresh herbs to taste: rosemary, sage, thyme, and basil (use less if use dried herbs)
Salt and pepper to taste

Preheat oven to 350 degrees F. Butter a 9 x 13 inch casserole dish.

Heat the oil in large skillet over medium-high heat and sauté onion and celery until translucent. Add this to the bread cubes. In the same pan, cook the crumbled sausage until fully cooked. Add the cooked sausage to the bread cubes. Add the pecans, craisins, herbs, salt and pepper to the bread cubes. Add chicken stock to the mixture until it comes together and place in the casserole dish.

Bake uncovered at 350 degrees F for approximately 45 minutes.
