An easy, quick, and yummy side dish. If you don’t like mangoes, you can substitute papaya or tomatoes for the mangoes.
1 -2 mangoes, depending on size and type
2 ripe avocados
1 – 2 Tablespoons vinaigrette (on my blog under “Sauce”)
Salt and pepper to taste
Peel the mangoes and cut into ~ ½ inch cubes. Cut the avocados in half and remove the pits carefully. Cut the avocado into similar size cubes as the mango. The goal is to have a ratio of 1:1 of mango and avocado.
Dress with ~ 1 – 2 tablespoons of my vinaigrette to your taste. The vinaigrette recipe is found on my blog under the category “Sauce” and posted March 2011. Add freshly ground pepper and serve.
