This recipe takes advantage of the wonderful summer produce and is super easy and quick. It is a wonderful side dish.
1 cucumber, (English or other firm cucumber)
1 large ripe tomato
1 – 2 Tablespoons vinaigrette (on my blog under “Sauce”)
Salt and pepper to taste
Peel cucumber if peel is bitter. Cut cucumber into ~ ½ inch cubes. Cut the tomato in half and gently squeeze out the seeds. Cut the tomato into similar size cubes as the cucumber.
Dress with ~ 1 – 2 tablespoons of my vinaigrette that is on this blog. Add freshly ground pepper and serve.
