There are many versions of this casserole and this one uses simple ingredients you would have in your kitchen. It was given to me by a friend many years ago. It obviously can be served for any meal. It is great for breakfast for house guests or for a leisurely weekend brunch.
7 slices of good white bread
8 oz. shredded cheddar cheese
3 cups low fat milk
½ teaspoon slat
¼ teaspoon pepper
1 teaspoon dry mustard
4 to 5 strips bacon
Trim crusts from bread and freeze crusts for bread crumbs for another dish. Break bread into chunks. Mix bread and cheese together and spread on bottom of greased ~ 7.5 x 12 inch baking dish. Beat eggs and milk together and stir in the salt, pepper, and mustard. Pour this liquid over bread and cheese. Lay bacon in strips on top of mixture. Refrigerator overnight covered with plastic wrap.
The next morning preheat the oven to 350 degrees Fahrenheit. Remove the plastic wrap and bake breakfast casserole at 350 degrees Fahrenheit for 50 – 55 minutes. Time this so that you can remove the casserole from the oven after guest sit down or the casserole will flatten.
Serves ~ 6-8 or more depending on portions
