You will like the simplicity of this recipe. The hens can be roasted in the oven or cooked in your BBQ kettle.
Preheat oven to 425 degrees Fahrenheit.
2 Cornish Game hens
¼ cup butter
¼ cup Dijon mustard or spicy mustard
1 ½ teaspoons minced, fresh tarragon
Melt butter in a small pan and then mix mustard into butter. Add tarragon and set the pan aside.
Rinse the hens. Split the hens lengthwise into halves. Place the four halves on a baking sheet or roasting pan and pat dry. The pieces should be separated for better roasting. Coat the hens on the inside and skin side with the mustard glaze using a brush or flat spoon.
Bake hens at 425 degrees Fahrenheit for approximately 35 – 40 minutes until the meat is cooked and liquid is clear. Place hens on plates and garnish with additional tarragon if desired. Add any juice from pan on top of the hens. Serve with fruit salad or green salad, green beans and/or potatoes or sides of your choice.
