Another quick way to make a meal and use those fresh, ripe tomatoes.
4 slices of bread: whole wheat, sourdough, or good quality white bread
1 ripe tomato, sliced
1 Tablespoon butter, room temperature
4 slices of cheese: such as Cheddar, Havarti, Monterey Jack, etc.
1 avocado, sliced thinly
Spread butter on the bread slices on one side only. Place two of the slices in a non-stick skillet or Panini press. Add one slice of cheese on the bread slices in the skillet. Top the cheese with the tomato slices and then with avocado slices and then the other slice of cheese. Place the second slice of bread on top with butter to the outside. Grill in skillet or press for two to three minutes and flip to the other side and grill another two to three minutes. Cut diagonally in half or thirds and serve with salad, coleslaw, or fruit salad.
