Fresh Tomato Toasted Sandwiches

This is a wonderful way to use those fresh and ripe summer tomatoes. It is a childhood favorite and a requested meal.

The recipe sounds ordinary but if you use firm, ripe tomatoes, the simplicity allows you to taste the tomatoes. We make these for lunch or dinner depending on the weather and mood.

4 slices of whole wheat, sourdough, or good quality bread
1 ripe tomato, sliced
Mayonnaise or butter
Salt and pepper
Basil leaves, arugula, or lettuce

Toast the bread. Spread mayonnaise or butter on the hot toast so that it can “melt” into the bread. Add the tomato slices on one side of the bread. Salt and pepper the tomato slices. Add the basil leaves or green of your choice. Top the tomato and greens with the other slice of bread. Cut diagonally in half or thirds.

Serve with fresh melon (or fruit of choice).
