This recipe is quick and tasty and can easily be modified to your taste.
1 lb. asparagus spears
~ 1 Tablespoon or less of olive oil
1 small lemon, rind and juice
Freshly ground pepper
Snap the tough ends of the asparagus off in the typical manner. Cut the asparagus spears into thirds, about 2 inches in length. Add olive oil to pan and heat pan on medium high. Add the asparagus pieces and sauté for approximately 4 – 6 minutes flipping asparagus frequently. Test for doneness to your taste. We do not like them too soft. Grate lemon rind (~ 1 tsp.) over the asparagus in the pan and add the juice of half of the lemon, squeezing right over the asparagus in the pan. Add salt and pepper to taste. Optional: add a few small drops of sesame oil for extra flavor.
Serve immediately with protein of your choice.
Serves ~ 4 – 6 people.
