Taco Turkey Casserole

This recipe is great for leftovers – turkey, chicken, ham, pork etc. I learned this recipe when I attended a class on how to use the microwave oven many years ago. Please modify it to your taste.

2 – 3 cups cooked turkey (or other fowl or ham)
1 bag taco chips
1 small can (4 oz.) diced green chiles
1 can sliced tomatoes or 3 fresh tomatoes, sliced
½+ lb. shredded cheddar cheese
1 can (10.5 oz.) diluted cream of mushroom soup (use ½ can of milk to dilute)

Line the bottom of a dish (one that can be used in a microwave oven) with the chips. Alternate the ingredients in layers on top of the chips. Start with the some of the turkey, chiles, cheese, tomatoes, and then taco chips again followed by other ingredients. Layer until ingredients are used (save some of the cheese for topping). Pour the diluted soup over the top and add remaining cheese.

Microwave for 8 – 10 minutes at medium energy or heat in 375 degree Fahrenheit oven for 30 – 40 minutes.

Serves 4 – 6
