“Duchesse” Potatoes (Elegant Mashed Potatoes)

This dish is a pretty way to serve potatoes for company. Use freshly mashed potatoes or left over mashed potatoes. Feel free to add cream if you want a richer dish and sprinkle with parsley instead of Parmesan cheese.

3 cups mashed potatoes
2 eggs, beaten
Melted butter – ~ 2-3 Tablespoons

Optional: Grated Parmesan cheese for top of potato mounds.

Preheat the oven to 375 degrees.

To 3 cups of mashed potatoes, add 2 beaten eggs. Mix well. Put mixture in a piping bag and pipe mounds onto baking sheet. You can also use a spoon to create the mounds but a pastry bag makes more elegant mounds.

Brush mounds with melted butter and sprinkle with Parmesan cheese lightly (optional). Bake at 375 degrees until potatoes are browned, approximately 15 – 20 minutes.

Serves ~ 6-8
