Cherry Tomato Salad

The farmer’s markets have wonderfully ripe, sweet tomatoes including varieties of cherry tomatoes. This recipe below is simple to make and can be made ahead for company.

4 cups halved cherry tomatoes (vary the tomato color if they are available)
¼ cup vegetable oil
3 Tablespoons wine vinegar
2 Tablespoons fresh chopped basil
½ teaspoon salt
1 ½ teaspoons sugar

Cut the tomatoes in half with a sharp knife and place in a bowl. Combine the oil, vinegar, basil, salt, and sugar and pour over the tomatoes. Stir gently to coat. Chill for at least 2 hours and stir again before serving.
