Tomato Sandwiches, (Toasted)

The farmer’s markets have wonderfully ripe, sweet tomatoes again. Use a tomato in its prime.

1-2 small tomatoes or medium tomato
Salt
Pepper, freshly ground
Good quality bread of your choice, four slices
Best Foods or Hellman’s mayonnaise (or homemade), ~ 2 teaspoons
Fresh basil, optional

Cut the tomatoes with a sharp knife into slices, ~1/8 inch thick.
Toast four slices of bread. Put mayonnaise on the toasted bread while still hot. Place tomato slices on the bread and salt and pepper the sliced tomatoes to taste. Add a layer of basil leaves if you desire.

Cut the sandwiches into halves or thirds and serve with fruit salad or salad of your choice.

These are so simple and you can taste the sweetly ripened tomatoes.
