This is the perfect cake to take to a BBQ, picnic, sick friend etc. It is super easy and children love it. The glaze makes it especially yummy. This was given to us by a friend and there are a number of versions out there.
1 box lemon cake mix
½ cup sugar
1 Tablespoon cornstarch
1 cup boiling water
1/4 teaspoon salt
2 Tablespoons butter
Zest from one lemon
3 Tablespoons lemon juice
Bake cake according to directions on the box in a 13” x 9” baking dish. Meanwhile, dissolve sugar, cornstarch, and salt into the boiling water. Cook until clear over low heat, stirring frequently. Add lemon zest and butter and stir and take off heat.
When cake is done, while still warm, pierce top with fork repeatedly. Add lemon juice to glaze, mix, and pour over cake, allowing it to soak in.
Serve warm or at room temperature.
