You can substitute flounder or sand dabs or other similar fish. Also, bread crumbs can be used in place of macadamia nuts.
4 small sole fillets (English or Rex sole)
Salt and pepper to taste
2 Tablespoons water
1/3 cup macadamia nuts, medium chop
1 Tablespoon oil
1 Tablespoon butter
1 Tablespoon lime juice, fresh
2 Tablespoons chopped parsley
Use a non-stick pan for this recipe.
Sprinkle fish on both sides with salt and pepper. Combine egg and water in a bowl. Place chopped macadamia nuts on a flat plate. Dip each piece of fish into egg mixture and then dredge in chopped nuts. Heat the oil in a non-stick pan to hot. Add fillets without crowding. Sauté the fillets about 1 minute on each side. Remove and keep warm. Wipe the sauté pan clean with paper towel and heat butter until foaming. Add the lime juice to the melted butter and pour over fish. Sprinkle with parsley and serve.
