Ham Salad Spread

This recipe is an easy way to use leftover ham. The spread is excellent for sandwiches or crackers.

2 cups finely chopped ham (chop ham by hand or a few pulses in the food processor which makes it more of a spread)
1/3 cup mayonnaise or more if needed
1 teaspoon mustard (Dijon, Gulden’s spicy, or one you prefer)
1/4 cup dill pickle relish (or chopped sweet pickles if you prefer)
Salt and pepper to taste

You may also add:
1 – 2 Tablespoons chopped green onions
2 Tablespoons chopped celery

Combine the ham, green onions, fennel, parsley, mayonnaise, Tabasco, and pepper in a large bowl. Mix well.

Serves 4 to 6
