This recipe is easy and you can change the seasoning to what you prefer. Good with roasted meats, chicken, ham, and poultry.
4-6 medium sweet potatoes
~ ¼ cup vegetable oil
~ ½ – 1 tsp. ground cumin or seasoning of your choice (curry, coriander etc.)
Salt and freshly ground pepper to taste
Preheat the oven to 425oF.
Scrub the sweet potatoes and slice them lengthwise into small sliced wedges and place into a large bowl. Coat the wedges with the oil. Pour the sweet potatoes and oil into a baking sheet. Spread them out evening into a single layer. Sprinkle the sweet potatoes with cumin and a little salt.
Roast the sweet potatoes until crisp about 30 – 35 minutes or longer until potatoes are tender inside. Take out of oven and sprinkle with salt and pepper to taste.
Serve while hot.
Serve 4-6 people.
