Rose’s Creamy Potato Casserole

This potato dish is easy and perfect for the holidays with turkey, roast chicken, beef, and pork.  My husband’s birthday request this year was Meatloaf (see  blog) and creamy potatoes.

8 oz. cream cheese
4 cups hot mashed potatoes
1 egg, beaten
~ 1/2 cup onion, finely chopped
1 teaspoon salt
1/3 cup parsley
1 teaspoon salt
Dash of pepper
1/4 cup – add milk if needed to make a creamy consistency

Soften the cream cheese.  Blend into 4 cups hot mashed potatoes.  Add egg, onion, parsley, salt and pepper.

Bake in 1 quart casserole at 350oF for 35 to 45 minutes
