This is a healthy, refreshing soup that is EASY to make.
2 cucumbers, (English or other firm cucumber)
2 quarts buttermilk
4 chicken bouillon cubes dissolved in ½ cup hot water
3-4 green scallions, finely chopped
Salt and pepper to taste
~¼ cup parsley, chopped
Dissolve bouillon cubes in hot water. Grate the cucumbers with the skin on. Chop the green onions. Add all to the buttermilk. Chill for 1-2 hours.
Ladle into bowls and garnish with parsley.
Serves 4- 6
