Versions of this salad have become popular again. Use this as your basic template and substitute the beans that you like. Fresh beans can be used also.
1 – 16 oz. can green beans and juice
1 – 16 oz. can garbanzo beans, drained (or black beans)
1 – 16 oz. can kidney beans, drained and washed
1 small green pepper, chopped
1 small red onion, chopped
¾ cup sugar (or less)
1/3 cup salad oil
2/3 cup vinegar
1 teaspoon salt
½ teaspoon pepper
Mix all ingredients together and marinate in the refrigerator overnight. Stir well.
