Fresh fennel bulbs are necessary for this recipe. You can add less celery and more fennel or add sliced green apple in place of the celery etc.
2 fennel bulbs, thinly sliced
5 celery stalks, thinly sliced
2 Tablespoons chopped fresh basil leaves, (roll leaves and then slice)
2 Tablespoons red wine vinegar
2 teaspoons olive oil
½ teaspoon salt
¼ tsp. ground black pepper
Combine all ingredients in a medium bowl and toss to combine. Let marinate for 30 minutes or more.
