Cheese Rounds with Fresh Thyme

This appetizer uses Roquefort cheese (or blue cheese) and fresh thyme.  You can substitute another soft cheese and use dried thyme but use less.

Preheat oven to 400 o F.

Lightly brush both sides of baguette slices with oil and place on a foil-lined baking sheet.  Toast in the over for about 10 minutes.  Freshly chopped thyme can be scatter over bread before toasting if desired.

3 oz. Roquefort cheese (or blue cheese, goat cheese etc.)
½ cup mayonnaise
½ cup sour cream
1 teaspoon Cognac
Fresh ground pepper to taste
Freshly chopped thyme leaves
Paprika (optional)

Mix all ingredients together and spread on toasts. Top with chopped thyme and sprinkle with paprika (if desired).  Bake in oven at 400oF for 8 – 10 minutes.
