You can serve this fresh fruit mixture as a side dish or as a refreshing dessert
1 medium size fresh pineapple
¼ cup Cointreau
2 Tablespoons confectioners’ sugar
1 cup fresh strawberries
1 cup seedless green grapes, halved
Cut the pineapple through the frond and into quarters. Remove the pineapple from the frond. Cut the core from the pineapple and discard. Cut pineapple into chunks and place in a large bowl. Add the Cointreau and confectioners’ sugar and mix gently. Refrigerate pineapple covered for about 3 hours or ready to serve.
Meanwhile, wash the strawberries and drain. Hull the strawberries and slice in large pieces. Halve the green grapes. Refrigerate the strawberries and grapes separately until ready to use.
Just before serving, toss all of the fruit together gently. Place fruit on lettuce if you are serving as a side dish. For a dessert, place fruit into dessert cups or bowls and serve with or without vanilla ice cream.
