Flank Steak – Summer dinner

Marinate 1-2  medium flank steaks in the marinade below for 1 – 1.5 hours.  Prepare the Cornbread Onion Pie (see Vegetable, Jan. 2011) while the flank steak marinates.  Prepare a green salad and dress with the vinaigrette (see Salads, March 2011) in this blog.  We love this dinner during the summer because it is easy and guest worthy.

1 small green onion, sliced finely 1 small ginger root, grated 1 ½ c. soy sauce ½ cup sherry 1 shallot, finely diced 1 Tablespoon salad or olive oil ½ teaspoon marjoram

Mix together and pour over flank steak or meat of choice and marinate for about 1½ hours.  Pour off the marinade and BBQ until medium or medium-rare and slice thinly and against the meat grain.
