Avocado and Citrus Salad

Easy to prepare and you can use grapefruit or oranges.  This can be a first course salad or a side salad with an entrée.

2 grapefruit or 3 oranges (save juice)
2 ripe avocados
Lettuce, washed and dried
¾ cup salad oil
¼ cup tarragon vinegar or white wine vinegar
1 teaspoon sugar
½ teaspoon salt
½ teaspoon dry mustard
¼ teaspoon dry ginger
¼ teaspoon ground pepper

Optional:   cherry tomatoes sliced in half

Peel and section the grapefruit or oranges, placing the surplus juice in a small bowl.  Peel and slice the avocados, dipping each slice into the juice to prevent discoloration.

Arrange the grapefruit and avocado slices on a bed of lettuce.

Combine the oil, vinegar, sugar, salt, dry mustard, ginger, and pepper.  Mix well and pour lightly over the salad.

Serves ~ 6  (as a side salad)
