These hot appetizers use packaged puff pastry and are worth every minute of preparation. They are also very versatile and spinach, mushrooms, or olive paste can be used for a filling.
½ package frozen puff pastry sheets (1 sheet)
1 egg, beaten
1 TBSP water
½ cup grated Monterey Jack or Muenster or similar style of cheese (2 oz.)
½ cup grated Parmesan cheese
1 green onion, chopped (about 2 TBSP.)
1/8 tsp salad herbs
1/4 lb mushrooms, finely chopped and sautéed until liquid is removed **
Thaw pastry sheet at room temperature for 30 minutes. Preheat oven to 4000 F. Mix egg and water and set aside. Mix the Monterey Jack cheese, Parmesan cheese, green onion, and herbs and set aside.
Unfold pastry on lightly floured surface and brush with egg mixture. Top with cheese mixture and mushrooms. Start at long side and roll up like a jelly roll. Cut into 20 (1/2 inch) slices. Place each piece 2 inches apart on a baking sheet. Brush tops with egg mixture.
Bake 15 minutes or until golden brown
** Subsititue 1 package (10 oz.) frozen chopped spinach, thawed and well drained. Another option is olive paste spread on puff pastry in place of the spinach.
