Bayou Pumpkin Bisque

This soup is so easy to prepare and it tastes great with little effort.  It is definitely a repeat recipe.

 
1 cup chopped onion, chopped
1 garlic (or shallot) clove, peeled
2 cups chicken broth
1 teaspoon salt
½ teaspoon nutmeg
½ teaspoon allspice
¼ teaspoon pepper
2 cups light cream
1 ½ cups canned pumpkin (plain)
1 cup canned chopped tomatoes, well drained

In a saucepan, sauté chopped onion and garlic in butter.  Remove garlic and discard.  Stir in chicken broth, salt, and other spices and bring to a boil.  Reduce heat and cover.  Simmer 15 minutes.  Meanwhile, combine the light cream and pumpkin and mix well until smooth.  When chicken broth mixture has simmered 15 minutes, stir in cream and pumpkin mixture and add canned tomatoes.  Heat gently until hot but do not boil.  Serve.

Serves 6
