Crispy Potato Slices

We have made these potato slices for years.  The original recipe is from a cookbook that I received for Christmas, “Lee Bailey’s Good Parties”.   I have seen other variations over the years but I return to this version.

4-5 unpeeled potatoes, variety of your choice, cut in ~ ¼ inch slides
~ 3 Tablespoons olive oil
Kosher salt to taste
Black ground pepper to taste
~ 1 teaspoon freshly cut rosemary or 1/3 teaspoon dried – [oregano works well also]

Preheat oven to 425 degrees.

Slice the potatoes and place in a bowl.  Add the olive oil to the potato slices and mix well.  Layer the potato slices in a shallow baking pan with each slice slightly overlapping the next. Sprinkle with salt, pepper, and rosemary.

Bake uncovered for ~ 45 minutes or until potatoes being to crisp and turn brown.
