Sweet and Sour Meatballs

This is a homey, easy recipe for the cold weather days.  As the meatballs cook in the oven, you can prepare a salad or side dish of your choice.

1 cup Panko crumbs or freshly ground white bread crumbs
½ cup onion, chopped finely
¼ teaspoon pepper
2 eggs, slightly beaten
2 pound ground beef
½ teaspoon garlic salt (optional)
1 teaspoon salt

Combine all ingredients and shape into balls about the size of walnuts.  Place in oblong pan and bake in hot oven (450 degrees) for 15-18 minutes.  Place meatballs in sweet and sour sauce (recipe below) and simmer additional 10 minutes in oven. 

Sweet and Sour Sauce

1 can tomatoes (1 lb., 12 oz. size)
½ to 1 cup brown sugar, packed (depends on how sweet you like this)
½ cup vinegar
½ teaspoon salt
1 teaspoon finely chopped onion
10 gingersnaps, crushed.

Combine all ingredients.  Cook to boiling.  Pour over meatballs.

Serves ~ 6-8
