This is a variation on the classic Waldorf salad and is easy and quick to prepare. You can leave the ham out or substitute chicken etc. I like the flavor of the ham best.
2-3 large apples, firm and crisp, chopped
1½ – 2 cups diced ham, (left over or from a slab of ham)
4 stalks of celery (inner stalks with leaves) thinly sliced
¼ cup walnuts, coarsely chopped
~ ¼ cup mayonnaise
Combine the apples, ham, celery, and walnuts. Add the mayonnaise and mix until well combined. Serve with crusty bread or by itself.
