These bars are easy to make and excellent to combine with other cookies for a gift or presentation. My friends who get a Christmas cookie plate every year always like these bars. The original recipe is from Marcia Adams.
½ cup butter
½ cup granulated sugar
1 teaspoon grated lemon peel
½ teaspoon vanilla
1 ¼ cup sifted flour
1/3 cup butter
½ cup packed brown sugar
1/3 cup honey
3 Tablespoons granulated sugar
1 ¾ cups coarsely chopped pecan
¼ cup whipping cream
Crust: Beat the butter in a mixing bowl on medium speed for 30 – 45 seconds. Add the ½ cup granulated sugar, lemon peel, and vanilla and combine. Slowly beat in flour with mixer. Pat dough firmly into an ungreased 13x9x2 inch baking pan. Bake at 350 degrees for 15 minutes. Remove from oven and set aside. Turn oven down to 325 degrees.
Filling: Combine 1/3 cup butter, brown sugar, honey, and 3 Tablespoons sugar in medium saucepan. Cook and stir over medium heat until mixture comes to a full boil. Remove pan from heat. Stir in pecans and whipping cream. Immediately pour over crust and spread evenly. Bake in a 325 degree oven for 25 minutes. Cool completely.
Cut into bars. Make about 54 bars.
