This is my mother’s recipe and these cookies call for a “light hand”…no over mixing. The dough is put through a cookie press and a simple metal one is fine or you can use a piping bag which I think is more challenging. I like the Sawa brand cookie press because it is inexpensive and easy to use. If the dough is not overworked, these cookies melt in your mouth!
1 cup soft butter
2 Tablespoons cream
¼ teaspoon vanilla
¼ teaspoon salt
2 cups flour
½ cup corn starch
½ cup icing sugar
Cream the butter and cream together. Add vanilla and mix. Mix flour, corn starch, and icing sugar in a bowl. Gradually add to the butter mixture. Mix until combined.
You can use dough immediately or cover and chill and bring back to room temperature when you are ready to bake the cookies. Fill the cookie press with dough and press cookies about one inch apart on a lightly greased cookie sheet. Decorate with sprinkles or colored sugar if you desire.
Bake at 350 degrees for 8 to 10 minutes until edges are lightly browned.
