Raspberry Jello Salad

I received this recipe from a colleague many years ago when molded salads were very popular.   They are becoming more popular again and are great to serve around the holidays for a buffet or colorful addition to a meal.

 Jello Mold:

2 small packages or 1 large package raspberry jello
2 cups boiling water
2 – 10 oz. packages frozen strawberries or 1 – 16 oz. package
1 cup applesauce

Combine the 2 small or l large package of raspberry jello with 2 cups of boiling water.  Add the two 10 oz. packages of frozen strawberries (or one 16 oz. package) and 1 cup of apple sauce.  Pour into a mold and gel for a few hours.

Dressing:  Make several hours in advance and refrigerate.

1 cup sour cream
1 cup tiny marshmallows
Blend sour cream and marshmallows well.

When the salad is jelled, unmold carefully with a hot cloth around the container onto a platter.  Pour the dressing into the center of the ring.
