Meatloaf II

This meatloaf recipe is interesting because it contains bell peppers and horseradish.

2 cups bread crumbs
¾ cup onions, chopped
¼ cup green bell pepper, chopped (or use red pepper for milder taste)
2 eggs, beaten
2 pound ground beef
2 Tablespoons horseradish
1/2 Tablespoon salt
1 teaspoon dry mustard
¼ cup milk
¼ cup ketchup

Mix ingredients lightly and place in a loaf pan.  Spread additional ½ cup ketchup on top of meatloaf mixture.

Bake in preheated oven at 400 degrees for ~ 40 minutes.

Serves ~ 6-8
