Meatloaf I

My husband likes meatloaf in the fall and winter served with mashed potatoes and green beans.  We have two recipes that we like.  This is one of them.

1 pound ground beef or meatloaf mix (if grocery has this)
~¾ pound ground pork
1 egg
1½ cups panko crumbs or freshly ground white bread crumbs
1 Tablespoon mixed herbs of choice [or salad seasoning mix (Spice Islands) or Penzey’s Sunny Paris blend]
¼ cup chili sauce (in ketchup section of grocery store)
2 slices bacon (optional)
3 Tablespoon chili sauce

Combine in a large bowl the ground beef, pork, egg, crumbs, herbs, and chili sauce.  Mix well and place mixture into a loaf pan.  Cover with bacon and then cover with additional chili sauce. 

Bake in preheated oven at 350 degrees for ~ 55 – 60 minutes.

Serves ~ 6-8
