Tomatoes Simply Dressed

The farmer’s markets have wonderfully ripe, sweet tomatoes this August.  Pick a couple of tomatoes in their prime and keep it simple.  Good ingredients are important in this dish.

2-3 small tomatoes or two medium-large tomatoes
Salt
Pepper, freshly ground
Good quality olive oil or vinaigrette (see blog for my recipe)
Fresh basil, sliced (or you can use fresh tarragon or fresh chives), chopped
[Remember to roll the basil leaves and then slice thinly]

Cut the tomatoes with a sharp knife into medium slices, ~1/8 to ¼ inch and place on a plate.  Salt and pepper the slices.  Lightly drizzle on olive oil or use a favorite vinaigrette.
Chop one of the fresh herbs above and gently sprinkle on the tomatoes.  Serve as a side dish for summer meals.
