This is an easy mayonnaise to make in your food processor or blender.  Our friend Oliver gave us this recipe.

We prefer to use canola or safflower oil.  You could use some olive oil but a mild one that doesn’t impart too much flavor makes a nicer mayonnaise in our opinion.

1 egg
1 ¼ TBSP lemon juice
1 TBSP vinegar
~¼ tsp. mustard (scant amount)
1 ½ cup canola oil

Blend ingredients in a food processor or blender except for oil.  Add the oil very slowly in a very thin stream for the first ½ cup of oil.  Add the remaining oil fairly slowly.  Add salt and pepper to taste.
