Alice’s Oatmeal Cake

This is another tasty cake that can transport easily for potlucks, schools functions, picnics, or family style entertaining.  The recipe is from my mother-in-law and she shared it with me when I married her son.

1 ¼ cup boiling water
1 cup quick-cooking oatmeal (not instant)
1 cube butter or margarine
1 cup white sugar
1 cup brown sugar
2 eggs
1 TBSP vanilla
1 1/3 cup flour
½ tsp. salt
1 tsp. soda

Pour boiling water over oatmeal and butter.  Cover and let stand for 20 minutes.
Mix white sugar, brown sugar, and eggs until blended.  Add vanilla and mix.  Add flour, salt, soda and  mix all ingredients.

Pour into a 9” x 13” buttered pan and bake for 30 minutes at 350 degrees.


1 cup white sugar
4 oz. butter or margarine
1 small can evaporated milk (5 oz)

Boil together sugar, butter, and milk for 2 or 3 minutes. 

1 cup nuts
1 cup coconut
1 TBSP vanilla

Add nuts, coconut, and vanilla to the boiled mixture above.  Boil 2 ½ minutes longer until it is almost thick.  Pour over baked, hot cake.
